​Growing up in Seattle, Washington and moving to Minnesota in 1999 was a big change for me. The first place I fell in love with in Minnesota was the North Shore of Lake Superior and instantly became obsessed with seeing the elusive Aurora Borealis. Living several hours away and having 2 young daughters at the time, the chance of seeing them were slim. Flash forward to 2018 and two adult daughters, I’m still chasing and waiting to catch a glimpse of those Northern Lights.
Borealis Bowls became what it is sitting on my couch and scheming the next phase of my life. I’d spent almost 18 years as a stay-at-home-mom to 2 daughters. My youngest who was 18 was born with cerebral palsy and being her main caretaker has been my full time job. I have always tried to provide a healthy lifestyle for my family. Most of which was how we ate. Acai smoothie bowls were always a special treat we sought out when visiting family and friends on the West Coast. Making it a possibility in Minnesota and out of a food truck seemed like the perfect next phase.
I connected with a food truck in Baltic, South Dakota that was originally a fire and rescue truck (#36) converted into an ice cream/smoothie/coffee truck. It was the perfect fit for the history it held and for what I had in mind for its future.
I believe healthy eating should be an option for everyone. A food truck providing healthy meals that fuel both your mind and body has been important to my family. Borealis Bowls works to create BLENDED plant-based, dairy free, 100% fruit, and no juice smoothie bowls to our customers.
